Sick! Again! WTF?!?!?!?!
Those g-d little germ factories!!! I know they are just kids, but every freaking time we visit, or Rob visits, I am sick within a week.
Seriously, this is bumming me out. I can’t breathe. I ache. I’m soooooooo tired. My voice? Gone. I sound like a cross between Peter Brady (the squeaking) and Patty/Selma (the rasping).
Run? Ha! It’s in my chest now, so forget that. Swim? I made it through our swim clinic on Saturday, but was in bed before 4:00, with sinuses that pounded and fortified themselves with concrete… or at least that is what it felt like.
Need… blanket, and tea. And sleep. Must… have… sleep. And Nyquil. Thank god for Nyquil.

Here you go. I made it and it. IS. AWESOME.
Boil two cups coffee in microwave. (I made some extra in the morning and just set it aside in the fridge until I was ready for it.)
Beat together:
1 c. oil
2 c. sugar
2 eggs
2-3 tsp. vanilla
Add to mixture:
1 cup baking cocoa
1 tsp salt
2 tsp baking soda
1 tsp baking powder
Alternate a cup at a time and beat slowly:
2 cups of flour
2 cups coffee
Beat until mixed thoroughly. Mixture will be quite watery.
Can be baked in either 13 x 9 or 2 round pans.
Bake at 350 for appx 25 minutes or until toothpick comes out clean.
This is a dense chocolate cake…very
good with lots of white
frosting made with glob of butter and a glob of Crisco (Beth’s mom’s words). I made a double batch of frosting as per her husband’s suggestion. :)
Here’s her frosting recipe: (very sweet and sugary, goes perfectly with the flavor of the cake)
half bag confectionary sugar
stick of butter softened
glob of Crisco(bigger than a golf ball)
quarter teaspoon salt
3 teaspoons vanilla
milk(pour in slowly to desired consistency)
March? Already?
Holy crap. When did March get here?
So I haven’t been posting, but I have been running – just 30 -35 minutes when I can squeeze it in. And I’ve been going to Spinning, so it’s all good… except for the part where I’m eating whatever the damn hell I please and hoping I don’t gain weight, but inevitably do, and now I’m back up to 147 lbs or so. *sigh*
It started with cake, you see. My friend emailed me her mom’s famous chocolate cake recipe, which has coffee in it, and butter cream icing, so I knew I was doomed right there. And it was Rob’s birthday, so I made the cake, and that’s where things totally went out the window as far as my eating was concerned.
But it was fucking awesome cake. Boy howdy.
Anyway, it’s March 1st and so I took a page from that Kevin Nelson book (at left), and decided to run today at lunch, just for the enjoyment of it, with no particular goal or mileage in mind. There’s one daily meditation in that book where he says, "it’s the first of the month. Go for a run. Make it a habit," or something. So off I went, and it was fantastic, albeit a bit chilly. Or a lot chilly. Or freakin’ freezing, if you want to know the truth. But it was worth it.
And then I had exactly 6 minutes to eat my lunch before I had to go to a meeting.
But now that the meeting is over and I am back at my desk, I’m feeling pretty great. So anyway, first of the month. Go for a run. That’s good advice, I think. I’m going to try to keep remembering that.
